Step 1: Preparation
The Gutless Method begins with preparation. Ensure that you have the animal in a workable space, moving any sticks or pokey weeds out of your way. Have your game bags, gloves, knives and headlamps out if needed. Prepare your water and snack if necessary (elk take a while!).
Step 2: This crucial step ensures that the animal's body heat dissipates quickly, preserving the quality of the meat. Follow these steps:
Start by placing the animal on its side, legs facing downhill if possible.
Make an incision along the spine, from the base of the skull to the pelvic bone. Remember to come outward from the hide with your blade as you are cutting to minimize fur on the meat.
As you get towards the rear of the animal, being mindful to avoid puncturing the stomach or intestines.
Remove the hide from one side of the animal, from neck to butt and from spine to center of belly. Cut around the legs as needed.
Step 2: Quartering
Quartering is where the Gutless Method truly shines. This technique divides the animal into manageable sections, making it easier to pack out. Follow these steps:
Begin by removing the hindquarters. Cut along the natural muscle seams to separate the leg from the carcass.
Repeat the process with the front shoulders, carefully following the bone structure.
The back strap, tenderloins, and neck meat can be removed at this stage as well. Don't forget your rib meat and brisket meat on the underbelly.
Now that you have the one side quartered, flip the animal over and repeat steps 1 and 2.
When you are complete there should be spine, rib cage and gut sack remaining for the other creatures to harvest.
Step 3: Packing Out
Packing out the meat is the final step in the Gutless Method. Here's how to do it efficiently:
Ensure that your meat is properly tagged and accounted for as per hunting regulations.
Pack each section of meat into game bags or suitable containers. These should be breathable and allow for air circulation.
Distribute the weight evenly among your packs.
With the meat secured, it's ready to be transported from the field.
Step 4: Cooling / Transporting
My preferred method to transport in a cooler is the following -
